soo...holidays and parties at home or in the workplace...what appetizer will you prepare?? please list ONE recipe for all of us to share!!!!

brenda will get these eventually for our OFF the kltchen wall cookbook!

Typed this all before and it didn't show up for some crazy reason.....gremlins in the computer, I guess!!

SPICED NUTS

1 Egg White
1 tsp. water
5 cups pecan or english walnut halves
1/2 cup sugar (could use splenda)
1/2 tsp. cinnamon
pinch of salt

Beat egg white with water until very foamy.
Add nuts and stir until well coated.  Mix
sugar, cinnamon, and salt together and add to nuts, stirring to make sure all are coated.   Place on a cookie sheet in a single layer and bake at 225 deg. for 1 hr.,stirring every 20 minutes.  Store in a covered container.

Cheese Stuffed Cherry Tomatoes
1 pint cherry tomatoes
1 package (4 oz) crumbled feta cheese
½ c. finely chopped red onion
½ c. olive oil
¼ c. red wine vinegar
1 tbsp. dried oregano
Salt and pepper to taste

Cut a thin slice off the top of each cherry tomato. Scoop out and discard pulp. Invert tomatoes onto paper towels to drain. Combine cheese and onion; spoon into tomatoes. In a jar with a tight-fitting lid, combine oil, vinegar, oregano, salt and pepper; shake well. Spoon over tomatoes. Cover and refrigerate for 30 minutes or until ready to serve.

Crazy Simple Salmon Bites......

Few slices of Ezekiel (or other low carb/high fiber) bread

Cut out little circles with a cap to your vitamin supplements by pushing the cap down into the bread and twisting.

Lay the little circles on a backing sheet

Spray lightly with alittle oil or not if you prefer

Sprinkle tops with alittle of your favorite seasoning ie..onion,
garlic, etc

Toast in oven for few minutes

Remove circles to a serving platter and top with your favorite
salmon spread or tuna spread. (Salmon with alittle low fat mayo works fine)

Sprinkle alittle dill or parsley on top and serve.

You can add any topping you like and have a quick lite snack.

HAM CHEESE ROLL UPS

thin sliced ham

green onions

cream cheese

spread cream cheese on the ham slices place green onion at end and roll up and then cut into slices about 1/2 in thick or so.

you can also chop the ham up with onions and mix in the cream cheese and use as a spread for crackers or on veggies.

 Cottage Cheese Stuffed Eggs

4 hard cooked eggs, cut in half and yolks removed
1/4 cup cottage cheese filling (recipe follows)
2Tbl finely chopped pickles
paprika

In small bowl combine egg yolks, filling and pickles.  Using a pastry bag with a large fancy tip, press a generous amount into the egg half. Sprinkle with paprika... place on a plate & chill until ready to serve

Filling
1 8oz carton cottage cheese, room temp
1/4 cup finely chopped pitted black olives
1/2 cup chopped green bell pepper
1/2 cup chopped red bell pepper
1/2 tsp onion juice

In a medium bowl, using an electric mixer on medium, combine the ingrdients and blend until smooth. Cover and chill at least two hours

I'm not going to post the recipe because there isn't one... but I just made and took this to an engagement party....

BIG red seedless globe grapes wrapped in feta cheese Lay the feta between layer of parchment paper and roll out thin, cut into squares and wrap the grapes with them to cover the grapes so they look like a ball.  Roll in pistachio dust.

I lined my devil egg dish with arugula to lay the grapes on, put a Buddah Hand as the center piece and draped black drapes on the vine for effect.

It's good to do when there will be red wine as the accompaniment.

Normally... and I say normally, I would have taken a crab dip or something but decided to do this after they had Buddha Hands reduced at Central Market from $16 to $4 and I had to have one... :)

Sorry I do not have a recipe to post.  My appetizers normally consist of sliced cheese on a wheat thin.  Thanks for the recipes posted.

Margo, I know that you are going to be getting this but just forget it since I am just doing this so that it is listed in my "latest posts" thing. That way when I am ready to copy it I got it right there.
